Zesty Microgreen Pesto

  • 1 packed cup (1oz container) of Alfalfa, Broccoli, or Gourmet Greens
  • 1 packed cup fresh basil
  • 1 clove of garlic (or more if desired)
  • 1/4 cup pine nuts or macadamia nuts
  • 1/2 cup parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Juice from ½ a lemon
  • Salt and Pepper to taste

 

In a blender, combine all ingredients and pulse until smooth. Taste and add salt and pepper as desired. 

Transfer to a glass container and keep in the refrigerator for up to one week.

Enjoy this super quick, tasty pesto on pasta, sandwiches, fish, or veggies for zesty flavor!
