
Zesty Microgreen Pesto

- 1 packed cup (1oz container) of Alfalfa, Broccoli, or Gourmet Greens
- 1 packed cup fresh basil
- 1 clove of garlic (or more if desired)
- 1/4 cup pine nuts or macadamia nuts
- 1/2 cup parmesan cheese
- 1/2 cup extra virgin olive oil
- Juice from ½ a lemon
- Salt and Pepper to taste
In a blender, combine all ingredients and pulse until smooth. Taste and add salt and pepper as desired.
Transfer to a glass container and keep in the refrigerator for up to one week.
Enjoy this super quick, tasty pesto on pasta, sandwiches, fish, or veggies for zesty flavor!
