
Gooey Microgreen Grilled Cheese Sandwich

- 1 handful sunflower or sweet pea microgreens (your choice!)
- 2 slices sandwich bread
- 1 slice white cheddar cheese, or enough to cover bread in a single layer
- 1 slice colby jack cheese, or enough to cover bread in a single layer
- Mayonnaise or butter

While heating your pan over low to medium heat (I find 4 is usually good), chop sweet pea or sunflower microgreens into rough chunks.
Spread a thin layer of mayonnaise (or butter) on one side of a slice of bread. Place it in the pan mayonnaise-side down. Place a cheese slice on the bread in the pan, then add the chopped microgreens on top of the cheese.
Next, add a second slice of cheese on top of the microgreens. Spread mayonnaise on a second slice of bread and complete the grilled cheese sandwich by placing it mayonnaise-side up.

Brown both sides and heat until the cheese is melted. Enjoy!
*For variation, you can also dip your sandwich into warm tomato soup or eat with a side of crunchy baby carrots.
*If you prefer, you can also assemble the sandwich on the plate before cooking, but I find that assembling in the pan is less messy.
